The Lin Family Handmade Noodle, one of the few handmade factories in present day Taiwan, is in Fusing, a township next to Lukang. Whenever there is a sunny day, glistening noodles can be seen hanging everywhere in the yard of the old courtyard house. The current owner of the noodle factory is the third generation owner and he worries that he might become the last.

To make noodles by hand is a complicated and labor-intensive process. One has to get up in the early morning to make the dough, stretch it and wrap it......

The electricity generated by the power plants has to be converted to voltages by the transmission and transformation system in order to be delivered to clients. If we say the power plant is the hematopoietic bone marrow, then the transmission lines are the blood vessels which run throughout our body. When a transmission line is disconnected, just like a blocked blood vessel, it will cause power outage and paralyze an area. People’s daily life and regional development will be severely affected.

Tianshe Village, located in Sikou Township, Chiayi County, used to be called Bamboo Basket Village since every family in the village made bamboo baskets in those days. But, with the rise of the plastic industry, the scarce source of the bamboo material, and the increase of the labor cost, the basket industry gradually declined. Nowadays, only two families in the entire village continue to uphold the tradition.

The store “Sugarcane-Smoked Flying Fish” is located by the coastal highway outside Shitiping Fishing Port. With its proximity to the port, the store gets a steady supply of just-caught flying fish. After being killed, cleaned, salt pickled, and smoked for more than eight hours, the fish transforms into delicious dried fish.

In fact, flying fish is one of the cheapest fishes since it doesn’t taste good. Its red meat is full of hemoglobin, resulting in dryness, a fishy smell, and......
